This Gluten-free Greek Chicken Salad is packed with tender marinated chicken, red onions, olives, homemade dairy -ree Tzatziki and lots of veggies! Perfect for meal prep and gluten free, paleo, and Whole30!

It comes with a delicious and easy to make Tzatziki Sauce. Made with simple, clean ingredients and is dairy-free, gluten-free, and paleo!

Greek Chicken Salad

Ingredients
  

  • 6 chicken breast chopped
  • 2 tsp. dried basil
  • 3 garlic cloves minced
  • 1/2 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. oregano
  • 1 tsp. parsley
  • 1 cup avocado oil
  • 1 tsp. pepper ground
  • 1 tsp. sea salt
  • 1 dropper full Nutridom Canada's Liquid Ginseng

Salad

  • 8-10 cups mixed green
  • 1/2 cup olives
  • 1 avocado sliced
  • 1/4 red onion thinly sliced
  • 1/2 cucumber sliced
  • 2 tomatoes sliced
  • 1 lemon sliced into wedges
  • 1/2 cup mint

Tzatziki sauce

  • 1 cup mayo (I like Chosen Foods)
  • 1 cup cucumber diced
  • 3 tbs. lemon juice
  • 1 tbs. garlic powder
  • 1/4 tsp. sea salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. dill
  • 1/4 tsp. fresh mint chopped

Instructions
 

  • Heat your grill to medium heat. While it is preheating, prepare the chicken marinade. Combine all ingredients into a large bowl and mix well to ensure everything is evenly coated.
  • Lay the chicken pieces on the grill and close the lid. Grill for 8 minutes on each side or until no longer pink.
  • While the chicken is cooking, prepare the salad. Combine the mixed greens to the mint and lay the lemon wedges on the side (for drizzling at the end).
  • Next, prepare the Tzatziki sauce. Combine the mayo to the mint in a small bowl. Assemble your salad with the greens as the base. Then add the chicken and top with the Tzatziki sauce.
