Pumpkin Spice Pancakes

Pumpkin pancakes are a delicious fall breakfast everyone will love! This easy recipe is made with the perfect amount of pumpkin spice flavour and the pancakes are so light and fluffy you won’t be able to stop eating them!

I took a poll on my Instagram stories asking if my followers wanted this pumpkin spice pancake recipe. I received a 100% vote for “yes”.


So, as promised, here is the delicious pumpkin spice pancake recipe.

I love to top mine with homemade unsweetened apple sauce and pecans.

Pumpkin Spice Pancakes

Servings 6 pancakes

Ingredients
  

  • 1/2 cup almond flour
  • 1/3 cup tapioca flour
  • 3 Tbs. coconut flour
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin spice
  • 2 eggs
  • 1/2 tsp. vanilla extract
  • 1/2 cup pumpkin puree
  • 1/2 cup coconut milk

Instructions
 

  • Combine all dry ingredients in a bowl.
  • Then add in the remaining wet ingredients and mix until well combined.
  • Preheat a large pan with coconut or avocado oil on medium heat.
  • Each pancake should be around 2 -3 tbs. of batter.
  • Fry on each side for a few minutes until the pancakes are golden.
  • Remove pancakes from the heat and top with coconut cream, unsweetened apple sauce, nuts or ghee.
