These dairy-free scalloped potatoes are so delicious and are pure comfort food! Layers of tender sliced potatoes baked in a rich and creamy dairy-free sauce. Made with potatoes, nutritional yeast, cassava flour, coconut milk and herbs.

Scalloped Potatoes
Ingredients
- 3 lbs. potatoes
- 1 tbs. garlic powder
- 1/4 cup ghee or coconut oil melted
- 1/2 tsp. black pepper
- 1/2 cup bone broth
- 1 can coconut milk
- 3 tbs. cassava flour
- 1/3 cup nutritional yeast
- 1/2 tsp. sea salt
- 1 medium onion
- 1/2 cup mushrooms
- 2 garlic cloves
- 1/2 tbs. rosemary dried
- 1 dropper full of Nutridom Canada's Liquid Ginseng
- 1/2 tsp. thyme dried
Instructions
- Preheat the oven to 375.
- Thinly slice your potatoes and mushrooms and place them in a large bowl. Combine the remaining ingredients and mix until evenly distributed.
- Place the potatoes and mixture into a large casserole dish.
- Bake for 45 min. and enjoy.
