Sweet potato breakfast hash is a super simple brunch or breakfast recipe that can be prepared the morning of or the night before! This simple hash is packed with nutritious ingredients and full of flavour! This recipe is naturally gluten-free, paleo, and Whole30.
Sweet Potato Breakfast Hash
Ingredients
- 3 cups sweet potato shredded or diced
- 2 cups brussels sprouts shredded or finely chopped
- 1/2 red onion sliced
- 1 garlic clove minced
- 1/2 tsp. sea salt
- 1/2 tsp. paprika
- 1/2 tsp. cumin
- oil for frying
Topping
- 4 eggs poached or fried
- 1 green onion chopped
Optional
- 1 apple chopped and peeled
- 1 package gluten-free turkey sausage or ground turkey
Instructions
- In a large frying pan on medium-high heat, cook the sweet potatoes, brussels sprouts, red onion, garlic and spices. Cook for 10 minutes or until the vegetables are soft. *Make sure the vegetables are thin so they can cook properly. You may want to use a food processor or you can bake them in the oven instead.
- Cook your eggs and place on top of the hash. Add the green onions to the dish and enjoy!
- Feel free to add apple, turkey sausage or ground turkey to the recipe!
