Grilled Chicken & Pineapple Salad
Ingredients
Citrus Dressing
- 3/4 cup fresh orange juice no added sugar
- 1/4 cup fresh lemon juice no added sugar
- 2 tbs. coconut milk
- 1/4 cup fresh parsley
- 3/4 cup olive oil
- 1 tbs. apple cider vinegar
- pinch of sea salt
- 3 droppers of Nutridom Canada's Liquid Ginseng
- 1 scoop Nutridom Canada's Marine Collagen
Salad
- 4 slices fresh pineapple
- 1 avocado sliced
- 1/4 red onion sliced
- 1/2 cup raw pumpkin seeds
- 1 cup fresh blueberries
- 6 cups mixed greens
- 4 large marinated chicken breasts See link above for basil marinade.
- 1/2 cup fresh basil chopped
Instructions
Dressing
- Combine dressing ingredients in a high-speed blender until smooth. Store in a glass mason jar with a lid for up to 7 days.
Salad
- In a large bowl or plate, add the mixed greens, pineapple, avocado, red onion, blueberries, and pumpkin seeds.
- Follow the instructions for the grilled chicken linked above. Once cooked, slice and place on top of the salad.
- Top with chopped fresh basil.
- Drizzle with as much dressing as desired.
