These Creamy Probiotic Blueberry Lemon Popsicles are so creamy and delicious, you will go crazy for them. They are the perfect way to keep cool this summer.

I love a good popsicle during the hot summer months. I have lots of great flavour combos going around my head and I can’t freeze them fast enough.

This popsicle has a lovely fresh flavour from the lemon and blueberries and an amazing creaminess from the yogurt or kefir. It can be enjoyed as a treat and even for a breakfast on the go.

Blueberry Lemon Probiotic Popsicles

Ingredients
  

Cream Layer

  • 3 tbs. blueberries sliced
  • 1 cup yogurt or coconut milk kefir
  • 1 tbs. maple syrup
  • 1 scoop Nutridom Canada's Marine Collagen

Blueberry Layer

  • 3/4 cup blueberries
  • 1 lemon juiced
  • 1 tbs. maple syrup
  • 3 droppers Nutridom Canada's Liquid Ginseng

Instructions
 

  • In a high-speed blender, add the yogurt/kefir, maple syrup and collagen. Blend until smooth. Fill each popsicle mould halfway.
  • Add the sliced blueberries to the moulds.
  • Next, add the blueberries, lemon maple syrup and ginseng to the high-speed blender until smooth.
  • Fill the popsicle moulds until they are full.
  • Freeze for approximately 8 hours.
