Summer is officially here. There will be long afternoons in the shade of the porch. There will be days at the lake. And there will be probiotic popsicles!

These Coconut Mangosteen Popsicles are the perfect healthy and easy-to-make summer treat that’s kid-friendly too! They’re made with 3 simple, healthy ingredients (including the exotic fruit mangosteen) and they’re sure to be a crowd-pleasing treat this summer!

If you aren’t familiar with mangosteen, it is an exotic fruit that has a deep purple colour and is about the size of a tangerine. Mangosteen typically grows in Southeast Asia and other tropical climates. It is known for its antioxidant function and immune-supporting properties.

 This recipe also includes coconut kefir. Kefir is what adds the “creaminess” to these popsicles. Coconut kefir provides the digestive system with beneficial bacteria to promote a healthy gut.

Probiotic Mangosteen Popsicles

Servings 6

Ingredients
  

  • 1 cup mangosteen juice
  • 1 cup coconut milk kefir
  • 2 tbs. raw honey or maple syrup

Instructions
 

  • Fill 6 popsicle moulds ½ way with mangosteen juice.
  • Next, in a medium-sized bowl, combine the coconut milk kefir and sweetener. Whisk until well-combined. 
  • Pour the coconut mixture to fill the remaining popsicle moulds. 
  • Place a popsicle stick into the holders and freeze until set.
