This Blueberry Chia Pudding is packed with wholesome ingredients and delicious blueberry flavour. Sweet, thick and absolutely amazing, it’s a perfect superfood breakfast loaded with nutrients, omega-3s and powerful antioxidants. + This chia pudding recipe is super easy to make and without refined sugar.

Blueberry Chia Pudding

Ingredients
  

  • 6 tbs. chia seeds
  • 2 cups coconut milk
  • 1 dropper Nutridom Canada's Liquid Ginseng
  • 1/2 cup frozen blueberries
  • handful fresh blueberries
  • granola optional

Instructions
 

  • In a mason jar, combine the chia seeds, coconut milk and ginseng together. Store in the fridge for a few hours to thicken or leave overnight.
  • Add the frozen blueberries to a small saucepan on low-medium heat. Heat the berries to make a delicious sauce.
  • Top the chia pudding with the berry sauce, fresh blueberries and granola.

    1. Hi Doris!

      I used Cha’s Organic coconut milk in the can. I made sure that some of the liquid from the can was added too. I think carton would work too it just wouldn’t be as creamy/thick. Depends on your preference 🙂
